Serves: 2 


Whole wheat bread - 4 slices

Bell peppers - 1 small

Red Chilli Flakes - 1 tablespoon

Green Chillies - 1 tbsp, finely chopped

Garlic - 6-8 Pods, finely chopped

Grated Cheese (Cheddar/Mozzarella) - 1/4 cup

Salt - to sprinkle

Butter  -  As needed



  1. In a pan, heat butter, add very finely chopped bell peppers. Toss them for a quick minute on high flame to retain crunch. 

  2. Switch off flame, add garlic chunks, red chilli flakes,  green chillies (adjust according to spice level and chilli variety). You can add other veggies like onions, sweet corn, olives at this stage. They are completely optional. Do not fry the mixture after adding all these.

  3. Do not add any extra salt as all three - bread, butter and cheese contain salt.

  4. Heat up pan and well butter it. Toast the bread slices on one side. Flip them, add butter to sides. On the top, add the bell pepper - chilli mixture. Also add cheese generously on the top. 

  5. Slightly press the bread with spatula to set the veggies and cheese on the bread.

  6. I personally do not prefer more cheese and hence added a little cheddar on top. You can make it as cheesy as you want using mozzarella.

  7. Toast them till cheese melts. Do not toast on both sides. Just lift the bread on one side and make sure its toasted brown and crispy. Do not cover the slices even as the bread becomes soft. We need that crunchy toast with spicy cheese stuffing melting in the mouth on the first bite.

  8. Switch off the flame and enjoy your spicy treat.
