OATS PORRIDGE
Contains nuts and seeds
Serves: 2
Ingredients:
Rolled Oats - 1/2 cup
Milk -2 cups
Fruits -Banana, Apple, Mango or any other of choice
Soft Dates - 2 pitted
Nuts and Raisins - Assorted (Almonds, Apricot,
Water Melon seeds, Black Raisins, dried raspberries/
cranberries, kishmish and chia seeds)
Vanilla Extract - 1/8 teaspoon
Maple Syrup - 1 tablespoon (optional)
Procedure:
-
In a sauce pan, bring two cups of milk to a boil.
-
Add rolled oats, let it come to boil, simmer the stove and cover with a lid.
-
If using instant oats, just add boiling milk to oats and set it aside to cool down. They need not be cooked.
-
Boiling time depends on quality of rolled oats. It may take somewhere between 10 - 12 minutes for oats to cook. Keep stirring in between to avoid burning.
-
Add maple syrup, vanilla extract, very finely chopped dates and little milk if necessary to make the porridge to a creamy consistency. Dates should be cooked in that heat.
-
Switch off the flame when the porridge is medium thin liquid. Do not make it too thick while on heat. Once cooled oats become thick and sticky.
-
Refrigerate. Add cold milk if necessary and serve chilled with your favorite toppings.
-
You can prepare this oats base the previous night and leave it in the fridge. You call it overnight oats. Add crunchy nuts like walnuts and roasted almonds just before serving.
