
STIR FRIED BEANS
Contains Garlic
Contains nuts
Serves: 3 to 4 people
Ingredients:
French Beans - 400 grams
Garlic - 5 pods
Mustard seeds - 1 tsp
Curry leaves - As needed
Peanuts - 2 table spoons
Dry Red Chilli - 3 Nos
Salt - As needed
Oil - As needed
[You can replace the dry red chilli in the recipe with black pepper corns. Coarsely grind half a tablespoon of them with garlic and roasted peanuts. But don't add both]
Procedure:

Heat up the wok add a wee bit of oil, just a teaspoon, roast peanuts, and then dry red chillies. Do not let the red chilli turn black or too dark. Let it cool, add raw garlic to these, and grind coarsely. Make sure to leave some chunks of peanut, garlic, and chilli there for that extra crunch.

If you do not prefer garlic, avoid it. You can also roast the garlic with peanuts for that roasted flavor.

Choose fresh, dark green, round beans for this recipe. We do not want that after the taste of the chewy, grassy texture of stale beans in the mouth.

Chop the beans into half-inch-long pieces, steam them in a steamer only till they retain that bright green color and shape.

Heat up a tablespoon of oil. Add mustard, curry leaves and let them splutter. Completely strain the beans from any water and add to oil. Add salt, toss the beans on high flame for a min and then add the ground peanut mixture. Continue to stir fry on high flame for not more than 2 or 3 min. Switch the flame and serve.
